Basmati Rice Pilaf

1 cup basmati rice
2 tablespoons chopped green pepper
2 tablespoons chopped red pepper
1 teaspoons minced garlic
1 /3 cup finely chopped onion
2 tablespoons finely chopped flat-leaf parsley (for garnishing)
1 1/2 cups chicken stock
2 teaspoons butter
1 tablespoon olive oil
1/2 teaspoons salt
1/2 teaspoons of fresh ground pepper

Wash basmati rice two or three times until water is clear. Put butter and olive oil in a medium heated pan. Add garlic and saute until caramelized and slightly toasted. Add chopped onions and mix well until they become transparent. Add basmati rice. and mix for 1 or 2 minutes. Add green and red pepper and mix for a minute. Pour chicken stock and mix all ingredients. Add salt and pepper and mix. Cook for 15 minutes on medium heat.  Lower heat and cook for another 5 to 10minute
