Chicken Tinola

1 chicken - cut to serving pieces
5 cups water
2 fingers ginger - sliced or pound in a mortar & pestle
1 medium onion - sliced
4 garlic cloves - skinned and lightly pound
3 tablespoons fish sauce
3 cups sayote (chayote) or upo (gourd), cubed 1 1/2"
1 cup sili leaves (green chili leaves) or spinach leaves

Put the chicken, water, ginger, garlic, onions, peppercorns in a pot and bring to a boil for 5 minutes. Season with fish sauce. Reduce heat and simmer for 20 minutes on medium-low. Add the upo or sayote and cook for another 3 minutes. Add the green chili leaves or spinach leaves. Turn heat off.
