Halayang Ube (Purple Yam)

4 pounds ube (purple yam), fresh or frozen
2 cups coconut milk
1 can condensed milk
1 teaspoon salt

Boil the ube in a big pot with water and cook for about 15 minutes or until cooked.  Let cool.
Mash ube with a potato masher or ricer.  You can also use a blender but you have to add the coconut milk and condensed milk. In a big wok, put the mashed ube, evaporated milk, condensed milk, butter, and slowly cook under medium-low heat until it thickens and liquids have evaporated. Add salt and vanilla and continue cooking on low heat until it becomes very thick.
