Scrambled Eggs with Feta Cheese and Chinese Sausage

Some of you might raise an eyebrow in disgust. Some might say, "what is she doing?" or "yuck! ", but it was actually delicious.

This fusion or marriage of the Greek feta cheese with the Chinese sausage was not intentional. It could have been a fusion/marriage of the Italian sausage and the Greek feta cheese, but Italian sausage was used to make pizza the other night. Besides, we were using up all the ingredients in the fridge so we can clean it and put in new fresh ones.

That was our breakfast this morning with newly ground freshly-brewed coffee and a toast. It was so easy to make.

4 eggs were beaten , 3 Chinese sausages were sliced thinly and were put on a pan with little water (to melt the fat in the sausage) under medium heat. When the water evaporated, I browned them on low heat for about 2 minutes. Then the fresh baby spinach leaves were added and cooked until they were slightly wilted. Eggs were poured and I waited about 25 seconds before I stirred the eggs with a wooden spatula. Lastly, I sprinkled the feta cheese around, and I immediately served them on plates.

I like my scrambled eggs a little moist but not raw.

I agree - it doesn't sound disgusting at all! I like all those ingredients, and it sounds really unique to put em together! I never used chinese sausage with things other than other chinese ingredients!
