Crispy Chicken Wings

Ingredients
3 lbs freshly bought chicken wings
Seasonings: parmesan cheese, lemon pepper salt seasoning,
sweet chili sauce(vietnamese), chili sauce (made in Louisiana),
ranch dressing, tomato salsa

Procedure
Set your oven to 450 degrees F.  Cut the chicken wings on the middle joints to make two pieces.  Wash then well.  Put them on a collander to drip and then wipe them dry with paper towels.  Steam them on a big steamer for about 20 minutes.  Lay 1/4" away from each other so they do not stick together.  After steaming, let them cool for one hour in the refrigerator.  Bake them on a cookie sheet with a cookie rack cooler for about 20 minutes on one side.  Turn and bake the other side for another 20 to 25 minutes or until golden brown.  Take out from the oven  sprinkle with your favorite seasoning.  You can also put some in a bowl and add a little sweet chile sauce or the Louisiana chili sauce. Cover with a plate and shake a few times. Serve on a platter and enjoy!
